What to do with extra zucchini?
October 6th, 2010 - 8:36 pm ICT by Aishwarya BhattFor all those with a green thumb there is always a problem of what do with the extra vegetables that they have planted in their kitchen gardens. Generally people plant vegetables and fruits, which they love and look forward to the produce.
However there is a big problem when the produce turns overwhelmingly well and it is too much for the owner to consume. Then starts the gifting process. People gift it to their neighbors, colleagues at work, acquaintances and all. There are many vegetables and fruits, which can be processed in such a way that they can be used months later, when that product is not in season. Like making jams, jellies or purees of various fruits.
However there is always an issue when there are some vegetables, which are not universally liked are there in plentiful, like zucchini.
People can use in it’s freshest form. Fresh zucchini can be grilled with some garlic cloves, sea salt and a good drizzle of olive oil and enjoyed with any meal of the day. With all the excess zucchini in your garden, there are numerous recipes that you can use it in. Apart from that, you can also add it to vegetable stock, vegetable stews, stir fry’s etc. and enjoy a variation to the normal dish.
