Mar 17, (THAINDIAN NEWS) St. Patrick’s Day is celebrated by the Irish with gusto and enthusiasm and the celebrations include gorging on traditional Irish recipes. The Irishmen love eating Corned beef and cabbage during this festive occasion and this dish is cooked in almost all Irish household during this time of the year. Kathy Walsh, who works in the Scranton School District as a food service worker, has become expert in cooking this delicacy even though she is not of Irish origin at all. She has mastered cooking this dish with the help of slow cooker. Her Corned Beef and Cabbage recipe won the first prize in Old Forge’s Rossi’s ShurSave Market.
Kathy Walsh had no experience of cooking this dish prior to meeting her spouse, who is Irish. She wanted to cook this dish since her husband told her that he is really fond of it. She dabbled with a few recipe books initially. However, she found none of these recipes easy to follow. At that time she bought a slow cooker and she was quite happy with the way everything was being cooked tender and tasty. So she decided to try cooking the Corned Beef and Cabbage in that cooker.
It took her eight hours to cook the dish using the slow cooker but the dish tasted awesome. Her husband was full of praise and this prompted her to cook the dish this way. She added few other spices and ingredients like brown sugar to the original recipe and the result is quite encouraging. The dish tastes the best with Irish soda bread as she has found out.
