Chia Moves From Pets To Cakes

chiaJuly 1, (THAINDIAN NEWS) The name ‘Chia’ will no longer be confined to pets alone. If reports from a new study are to be believed, Chia may soon replace eggs or oil, two very essential ingredients required to make a cake. The new study released by the Center of Excellence in Products and Processes Cordoba in Argentina says that the Chia seeds will effectively replace eggs or oil in cakes, with the taste remaining the same and will come around as a healthy option for everyone consuming them because it is well known that while eggs and oil are high in fat content, Chia seeds are not.

Rafael Borneo, the leading researcher of the new study has used a gel made by combining Chia and water in cakes. This gel has first replaced 25% and then 50% and 75% subsequently of the egg and oil content in a cake. He then asked a group of 75 people to taste the new variety, all of them agreeing that Chia could effectively replace egg and oil. However the tasters were of the opinion that while the cake using 25% of Chia gel was no different from a regular cake, the other two were a little different, with the difference in taste being very minor. The new cake was judged not only on the basis of its color but also on the basis of its look and texture.

While there is no real change in taste, the calorie intake reduces considerably. The researchers are therefore hopeful that the Chia seeds will henceforth be used by confectioners and groceries around the world in an attempt to make a healthy cake.
